Makes: 2 glasses

Deep Purple
150g frozen bluberries
2 tbsp rose water
3-4 ice cubes
1 splash of agave as a bonus
Water, if required

Fresh Green
1/2 fennel
1 stalk dill
1 handful of spinach
1/2 apple
1 frozen banana
1/2 lemon juice
3-4 ice cubes
200ml water

1 tbsp dried rose petals
1 tbsp fennel seed
2 tbsp crushed hazelnuts
1 tsp crushed black pepper
1 tbsp dried blueberries
1 tbsp dried dill
2 tbsp matcha
1 tsp fleur de sel
Fennel and fresh dill for decoration

You’ll need
2 stemmed glasses
Spice toasting pan
Cutting board
Good knife or mandolin
Mortar & pestle (optional)

In a pan, toast the crushed nuts, fennel seeds and pepper. This will add depth and smoky flavours. After toasting, mix the toasted elements with the remaining ingredients: rose petals, blueberries, dill, matcha and fleur de sel.

Deep Purple
Mix all ingredients in a blender until smooth and pour into glasses. Set aside in a cool place. Clean the blender with water for the next step.

Fresh Green
Using a mandolin or a sharp knife, cut slices of fennel for decoration. Blend the remaining ingredients until smooth. Pour the green mixture on top of Deep Purple.

Sprinkle the Accro-crunch on top and finish with a slice of fennel and dill. Ready to serve! The ice cubes in this recipe add freshness and a sorbet-like texture.

Bon appétit!
